VIENNESE WHIRLS – with White Chocolate Ganache & Raspberry Jam

For some unknown reason I do not bake cookies or biscuits a lot, so I decided to go all-in with this recipe. These Viennese Whirls are simply AMAZING! I filled them with raspberry jam and white chocolate ganache that makes them so decadent. The shortcrust pastry is made by the whipping method, that is you have to use the whisk attachment of your stand mixer, and this makes the perfect texture that will just melt into your mouth.  

Well, they are not recommended if you are on a diet, but you can maybe fill them only with  jam, or simply eat them without worrying too much about the calories. I had lots of fun making these cookies, I hope you will too!

VIENNESE WHIRLS – biscottini con ganache al cioccolato bianco e marmellata di lamponi

Non so bene per quale motivo ma ho notato che faccio pochi biscotti, per cui ho deciso di invertire questa tendenza giocandomi subito una ricetta favolosa. Chiamarli biscotti è riduttivo, perché i Viennese Whirls sono dei dolcetti F-A-V-O-L-O-S-I. Un morbido ripieno di ganache al cioccolato bianco, con un velo di marmellata di lamponi, racchiuso tra due biscotti di frolla montata che si sciolgono in bocca. Se siete a dieta, è meglio che guardiate da un’altra parte oppure copritevi gli occhi mangiateli senza pensare alle calorie. Ovviamente sono buonissimi anche gustati da soli, o semplicemente con la marmellata se volte stare più leggeri. La ricetta della frolla montata perfetta è quelle di Dario Bressanini, cosa faremmo senza i suoi preziosi consigli? Io mi sono divertita a fare questi dolcetti e soprattutto a mangiarli, e spero di aver fatto venir voglia di prepararli anche a voi!

Ingredienti

Per la frolla montata

200 g burro
130 g zucchero a velo
66 g uovo
32 g tuorlo uovo
280 g farina 00
50 g amido

Per la ganache al cioccolato bianco

300 g cioccolato bianco di buona qualità
100 g panna fresca

Qualche cucchiaio di marmellata di lamponi per la farcitura

Procedimento

  1. Montare lo zucchero a velo e il burro con le fruste elettriche per circa 5-10 minuti fino ad ottenere un composto bianco e spumoso. E’ importante che il burro sia a temperatura ambiente, e abbastanza morbido.

  2. Aggiungere le uova e i tuorli uno alla volta, sempre continuando a lavorare l’impasto con le fruste elettriche.

  3. Aggiungere la farina e l’amido precedentemente setacciati incorporandoli con una spatola, oppure con l’accessiorio “foglia” dell’impastatrice.

  4. Trasferire il composto in una sac-a-poche con una punta a stella e formate dei biscotti a forma circolare direttamente su una teglia ricoperta di carta da forno

  5. Mettere la teglia in frigorifero per 1 ora, e puoi cuocere in forno preriscaldato a 175° per circa 15 minuti, o finchè i bordi non saranno dorati.

  6. Lasciare raffreddare e nel frattempo preparare la ganache al cioccolato bianco.

  7. Tritare il cioccolato a pezzetti, così si scioglierà più facilmente. Far scaldare la panna fresca in un pentolino fino quasi a bollore.

  8. Versare la panna calda direttamente sul cioccolato a pezzetti e lasciar riposare qualche minuto, dopodichè mescolare bene. Se il cioccolato non dovesse essersi sciolto completamente mettere, far sciogliere ulteriormente la ganache a bagnomaria, o nel forno a microonde.

  9. Lasciar raffreddare a temperatura ambiente e poi riporre in frigorifero per almeno mezz’ora.

  10. Riprendere la ganache dal frigorifero e montarla con le fruste elettriche per qualche minuto, trasferire in una sac-a-poche con una bocchetta a stella.

  11. Decorare i biscotti mettendo sulla base un leggero strato di marmellata al lampone e poi con uno strato di ganache, e infine richiuderlo con un altro biscotto.

Ingredients

  • FOR THE SHORTCRUST PASTRY
  • 200 g butter
  • 130 g icing sugar
  • 66 g whole egg
  • 32 g egg yolk
  • 280 g flour 00
  • 50 g cornstarch
  • FOR THE WHITE CHOCOLATE GANACHE
  • 300 g good quality white chocolate
  • 100 g double cream
  • ***
  • few spoons of raspberry jam for the filling

Instructions

Whip the icing sugar and butter with an electric whisk for about 5-10 minutes until the mixture is white and fluffy. The butter must be at room temperature and soft.

Add the eggs and egg yolks one at a time, and keep beating with the electric whisk.

Add the flour and cornstarch previously sifted and fold them using a spatula, or with the "leaf" attachment of the stand mixer.

Transfer the mixture into a piping bag with a star nozzle and pipe circular-shaped biscuits directly on a baking sheet covered with parchment paper.

Put the baking tray in the refrigerator for 1 hour, then bake in a preheated oven at 175 degrees for about 15 minutes, or until the edges are golden brown.

Allow cooling and in the meantime prepare the white chocolate ganache.

Chop the white chocolate finely. Heat the fresh cream in a saucepan until simmering.

Pour the hot cream directly onto the chopped chocolate and let it rest for a few minutes, then mix well. If the chocolate has not melted completely, add, melt the ganache over a bain-marie, or in a microwave.

Allow to cool to room temperature and then refrigerate for at least 30 minutes.

Remove the ganache from the refrigerator and whip it with an electric whisk for a few minutes, transfer to a piping bag with a close star tip.

Decorate the cookies by placing a layer of raspberry jam on the base and then a layer of ganache, and finally close it with another cookie.
