SOUR CREAM MOCHA BUNDT CAKE – with caramel sauce

This is the moistest Bundt cake, with espresso coffee and a decadent caramel glaze. This recipe is so simple that it will take you only 10 minutes to make the batter, and for the caramel you will need only two ingredients, plus a little bit of patience. 

This caramel is perfect for cake drizzling or even just to boost your morning coffee. Here the secret ingredient is the sour cream that will make your cake extremely tender and moist.

BUNDT CAKE AL CAFFE’ – con panna acida e salsa al caramello

Una ciambella morbidissima al caffè con glassa al caramello, questa è quella che io definisco una torta “spaziale”. La ricetta è semplicissima, ci si impiegano poco più di 10 minuti a preparala. Per la salsa al caramello bastano solo 2 ingredienti e un attimino di pazienza, il risultato sarà una glassa profumata e vellutata, perfetta non solo per le torte ma anche per molte altre preparazioni, potete anche metterla sul fondo della tazzina del vostro caffè mattutino. Il segreto per la morbidezza di questa torta è l’aggiunta della panna acida, facilmente reperibile nella maggior parte dei supermercati. L’aggiunta di questo semplice ingrediente saprà trasformare la texture delle vostre torte e conservane la morbidezza più a lungo.

Ingredienti

250 g farina 00
1 cucchiaino di lievito
1/2 cucchiaino bicarbonato
2 uova
150 g zucchero semolato
60-70 ml olio di cocco (oppure altro olio vegetale)
150 g panna acida (creme fraiche)
1 tazzina di caffè espresso
un pizzico di noce moscata
estratto di vaniglia
un pizzico di sale

Per la salsa al caramello

240 ml panna fresca
1 cucchiaino estratto di vaniglia
220 g zucchero semolato
120 ml acqua

Procedimento

  1. Setacciare la farina in una ciotola, aggiungere lievito e bicabonato e mettere da parte.

  2. In una planetaria sbattere lo zucchero, le uova e la panna acida per un minuto.

  3. Aggiungere la farina setacciata e continuare ad impastare.

  4. Unire l’olio di cocco e la tazzina di caffè.

  5. Aggiungere un pizzico di sale, estratto di vaniglia e una spolverata di noce moscata.

  6. Versare il composto in uno stampo da Bundt cake (6-cups) imburrato e infarinato (oppure utilizzare uno spray staccante).

  7. Cuocere in forno preriscaldato a 175° per circa 35-40 minuti, o finché uno stecchino inserito nel centro esce pulito.

  8. Lasciar raffreddare 10 minuti dopodiché, quando è ancora tiepido, sformare il dolce e lasciar raffreddare completamente.

  9. Per la salsa al caramello, per prima cosa mescolare l’estratto di vaniglia con la panna e tenere da parte.

  10. Mettere l’acqua e lo zucchero in una pentola con i bordi alti e mescolare leggermente.

  11. Far cuocere a fiamma media senza mai mescolare, inizialmente lo zucchero si dissolverà, poi comincerà a bollire e infine diventerà di un colore ambrato. Un trucco per evitare la cristallizzazione dello zucchero è mettere qualche goccia di succo di limone.

  12. Quando avrà raggiunto il colore ambrato, togliete la pentola dal fuoco e aggiungete immediatamente metà della panna mescolando con un cucchiaio di legno.

  13. Il caramello caldo reagirà con la panna che è fredda facendo delle bolle quindi è bene stare molto attenti durante questa fare. Aggiungere il resto della panna e mescolare bene.

  14. A questo punto il caramello è pronto, possiamo versarlo in un contenitore resistente al calore e lasciarlo raffreddare a temperatura ambiente prima di usarlo.

  15. Successivamente possiamo metterlo in un barattolo di vetro e conservarlo in frigorifero per alcune settimane.

Ingredients

  • FOR THE BUNDT CAKE
  • 250 g plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 150 g caster sugar
  • 60-70 ml coconut oil (or other vegetable oil)
  • 150 g sour cream
  • 1 small cup of espresso coffee (a shoot or a double shot max)
  • pinch of nutmeg
  • vanilla extract
  • pinch of salt
  • FOR THE CARAMEL SAUCE
  • 240ml double/heavy cream
  • 1 tsp vanilla extract
  • 220 g caster sugar
  • 120 ml water

Instructions

In a bowl mix the sour cream with the eggs and the sugar, mix slightly then set aside.

In another bowl sift the flour with baking powder, baking soda, and salt.

Place the sifted dry ingredients in a stand mixer, then add the wet ingredients, the coconut oil, and the small cup of espresso coffee.

Add vanilla extract and a pinch of nutmeg, and beat well for a couple of minutes.

Pour the batter into a greased bundt cake tin (6 cups size).

Bake it into a preheated oven at 175 degrees for about 35-40 minutes.

Let it cool for 15 minutes and then, remove the cake from the mold and let it cool completely on a wire rack.

For the CARAMEL SAUCE:

Add the vanilla extract to the double cream and set aside.

Place sugar and water in a medium heavy-duty saucepan and heat over medium heat without stirring until the sugar dissolves into a clear syrup.

To prevent sugar from crystallizing add a few drops of lemon juice.

Let it cook until the caramel has gotten a golden amber color, then remove it from the heat.

Immediately add the double cream and stir it vigorously with a wooden spoon. My tip is to start by adding half of the heavy cream as it will bubble a lot, then add the rest.

Be very careful while doing this operation because the caramel is very hot.

Pour the caramel into a heatproof bowl and let it cool down, then you can use it immediately or transfer it to a glass jar and keep it for a few weeks into the refrigerator.
