SMOKED SALMON BAGELS – HOMEMADE

Third appointment #shootmysandwich and now is bagel time my friends! Bagels are another great brunch classic, and I also went for the most classic filling: smoked salmon, cream cheese, and chives. 

Making bagels at home is so funny, especially because there is the boiling part, which is kind of unusual in baking recipes. So, save the recipe, try to make your own bagels, and then let me know your comments down below!

BAGELS FATTI IN CASA CON SALMONE AFFUMICATO

Terzo appuntamento della rubrica #shootmysandwich e questa volta vi sorprendo con un bagel super farcito. Gli amanti del brunch saranno d’accordo con me che il bagel è un altro grande classico della colazione salata, benché in Italia sia ancora un prodotto che oserei definire di nicchia. Ho deciso di farcirlo nella maniera tradizionale con salmone, formaggio fresco e un tocco di erba cipollina. Preparare i bagel a casa è molto divertente, secondo me, perché uno dei passaggi prevede che vengano bolliti per circa un minuto, ed è un’operazione insolita nella panificazione. E’ proprio questo passaggio a dare ai bagels la loro tipica consistenza, croccante fuori, gommosa ed elastica dentro.

Ingredienti

Per l’impasto dei bagels

500 farina tipo “0”
340 ml acqua tiepida (36°C)
7 g lievito di birra secco
1 cucchiaio di zucchero
1 cucchiaino +1/2 di sale
semi di sesamo
semi di papavero

Per la farcitura

150 g formaggio fresco tipo philadephia
200 g salmone affumicato di qualità
1 cetriolo
qualche rapanello
erba cipollina

 

Procedimento

  1. Mescolare con una forchetta il lievito di birra con l’acqua tiepida (circa 36° C) e lo zucchero.

  2. Trasferire il mix di lievito in una planetaria con il gancio (oppure nel boccale del Bimby® per chi lo possiede), e versarci sopra la farina e il sale.

  3. Attivare la planetaria e lavorare per circa 3/5 minuti velocità 2 (bassa).

  4. Per chi ha il Bimby® impastare 3 minuti modalità spiga.

  5. Trasferire l’impasto su una spianatoia e continuare ad impastare in maniera energica per circa 8/10 minuti, fino all’ottenimento di un impasto liscio ed elastico.

  6. Formare una palla con l’impasto e lasciar lievitare all’interno di una ciotola capiente in un luogo tiepido e al riparo da correnti d’aria per circa 1 ora.

  7. Una volta terminata la lievitazione, trasferire l’impasto nuovamente su una spianatoia e dividetelo in 8 parti uguali.

  8. Utilizzando il palmo della mano creare con ciascun pezzo in una pallina, esercitando una leggera pressione contro la spianatoia e roteando.

  9. Adagiare le palline su una teglia ricoperta di carta da forno, coprire con un canovaccio inumidito e lasciare riposare per 10 minuti.

  10. A questo punto possiamo ricavare i bagel dalle palline infilando le dita al centro di ogni sfera e allargandole verso l’esterno.

  11. Porre sul fuoco un tegame con acqua e un cucchiaino di malto oppure miele e portare a bollore.

  12. Cuocere i bagels (uno o due alla volta) nell’acqua bollente circa 30 secondi per lato, dopodiché utilizzando una schiumarola scolarli e posizionarli su una leccarda foderata con carta forno. E’ possibile aumentare il tempo di cottura nell’acqua fino a 1 minuto per lato, in questo caso il risultato sarà un bagel più “gommoso”.

  13. Spennellare i bagels con un tuorlo d’uovo diluito con un pochino di latte, e decorare con sale, semi di sesamo e semi di papavero.

  14. Cuocere in forno preriscaldato a 180-200° per circa 20 minuti.

  15. Farcire i bagels con formaggio spalmabile, cetriolo e rapanelli a fettine sottili e salmone affumicato.

Ingredients

  • FOR THE BAGELS
  • 500 g bread flour
  • 340 ml lukewarm water
  • 7 g dry yeast
  • 1 tbsp sugar
  • 1 and 1/2 tsp salt
  • sesame seeds
  • poppy seeds
  • FOR THE FILLING
  • 150 g cream cheese
  • 200 g high quality smoked salmon
  • 1 cucumber
  • 5-6 radishes
  • chives

Instructions

Mix the yeast with lukewarm water and whisk it with a fork (or in a stand mixer), then add the sugar.

Add flour, salt, and with the hook attachment of the stand mixer knead the dough for about 3-5 minutes, at a medium-low speed.

If you got a Thermomix® you can use the kneading dough function for 3 minutes.

Transfer the dough on a lightly floured surface and keep on kneading with your hands for about 8-10 minutes.

Once you have a smooth and elastic (but not sticky) dough form a ball and place it in a bowl covered with clingfilm.

Let rise in a warm place until doubled, about 1 hour. You can let it rise into the oven with only the light on.

Punch down the dough with your fist, turn onto a lightly floured surface and shape 8 round balls.

Cover and let rise again for about 10 minutes.

Use your index finger to poke a hole through the center of each ball, then twirl the dough on your finger to stretch the hole until it's about 1 1/2" to 2" in diameter.

Place the 8 bagels on a baking sheet covered with parchment paper and, in the meantime, bring to a boil a large pan with water.

Add a teaspoon of malt or honey to the simmering water and gently cook each bagel for 30 seconds per side, up to 1 minute per side.

Using a skimmer or strainer, remove the bagels from the water and place them back on the baking sheet.

Top with your desired toppings while they're still hot and wet, I used an egg wash and a mix of sesame and poppy seeds.

Preheat the oven and bake at 200° for 20 minutes.

Remove from the oven and let them cool on a wire rack.

Now you are ready to fill them with cream cheese, sliced cucumber and radishes, and top-quality smoked salmon. Personally I suggest Red King Salmon which is amazing.
