GLUTEN-FREE BEETROOT CAKE

Honestly, I am really enjoying making these healthy cakes, so let’s go ahead with no butter, low sugar and vegetables. Plus, this recipe is also gluten-free thanks to the rice flour. The star today is beetroot as I found in a local organic grocery store an amazing beetroot juice, so I decided to make a cake with it!

I can assure you that this cake is super delicious, in fact I brought it to a dinner party at my friends’home and even people who do not usually eat sweets said it was amazing and they also ate two big slices! Just try this recipe and then let me know your comments!

TORTA ALLA BARBABIETOLA SENZA GLUTINE E SENZA BURRO

E proseguiamo con le torte sane, con tante verdure ma anche tanto gusto, e ancora senza glutine. Ho proprio voglia di esplorare e sperimentare questo campo in questo periodo, per ho messo il burro ed altri ingredienti da parte per far spazio a qualcosa di diverso ma che vi assicuro essere D-E-L-I-Z-I-O-S-O. Ho comprato del succo alla barbabietola e ho deciso di farci una bella ciambella, non posso farvi vedere l’interno della torta perché l’ho portata a cena a casa di amici, per cui ho rinunciato allo scatto con la fetta tagliata. Ebbene sappiate che hanno tutti fatto il bis, persino quelli che di solito non amano molto i dolci. Provatela e poi fatemi sapere!

Ingredienti

200 g farina di riso
75 g farina di nocciole (nocciole tritate)
80 ml olio di cocco
185 g zucchero di canna
1/2 cucchiaino bicarbonato
1 cucchiaino di lievito
2 uova grandi
150 ml succo di barbabietola
50 ml latte di kefir
scorza d’arancia
pizzico di cannella
pizzico di zenzero
estratto di vaniglia
pizzico di sale

Procedimento

  1. In una planetaria (o in una ciotola) setacciare le farine con il lievito e il bicarbonato, aggiungere lo zucchero, l’olio di cocco e le uova, mescolare bene per circa un minuto.

  2. Aggiungere la scorza di arancia, il succo di barbabietola, la cannella, lo zenzero, e il pizzico di sale e lavorare l’impasto ancora per 1 minuto.

  3. Versare il composto in uno stampo da Bundt cake imburrato e infarinato (oppure utilizzare uno spray staccante).

  4. Cuocere in forno preriscaldato a 175° per circa 35-40 minuti, o finché uno stecchino inserito nel centro esce pulito.

  5. Lasciar raffreddare 15 minuti dopodiché, quando è ancora tiepido, sformare il dolce e lasciar raffreddare completamente.

Ingredients

  • 200 g rice flour
  • 75 g ground hazelnuts
  • 80 ml coconut oil
  • 185 g brown sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 large eggs
  • 150 ml beetroot juice
  • 50 ml kefir milk
  • orange zest
  • pinch of cinnamon powder
  • pinch of powdered ginger
  • pinch of salt

Instructions

In a bowl (or in a standmixer) sift the flours with baking powder and baking soda.

Then add the sugar, the coconut oil, and the eggs, and mix well for 1 minute.

Add the orange zest, the beetroot juice, the kefir milk, cinnamon, ginger and the pinch of salt and mix again for another minute.

Pour the mixture into a greased Bundt® baking pan (10 cups size).

Bake it into a preheated oven at 175° for about 35-40 minutes.

it cool 15 minutes and then, when is still warm, remove the cake from the mold.

      Ciao Alex, per la glassa prendi lo zucchero a velo e aggiungi poco alla volta (un cucchiaio per volta) un liquido a scelta, può essere anche solo acqua, oppure succo di barbabietola, o di limone, arancia etc. Aggiungi poco alla volta mescolando bene e valuti la consistenza finchè non raggiungi quella che preferisci, più densa oppure più liquida.
