Cinnamon Rolls

The absolute favorite dessert of my sweetheart, and how to blame him, cinnamon buns are absolutely fantastic. I tried, read, compared and mixed I do not know how many variations to get to my personal recipe, the one that I think is right for me at least. The result is just what I was looking for: the buns are fragrant on the outside, soft on the inside, and you will not feel the taste yeast’s taste, which occasionally can come out when it comes to yeast-based dough. In addition to cinnamon I also added cardamom, after crushing the seeds in a mortar, the aroma that it releases will make you dream you are a bakery in Stockholm.

Il dolce preferito in assoluto della mia dolce metà, e come dargli torto, le Cinnamon vincono proprio facile. Ho cercato, letto, confrontato e mixato non so quante versioni per arrivare alla mia ricetta personale, quella che ritengo essere giusta per me. Il risultato è proprio quello che cercavo: i buns sono fragranti all’esterno, morbide all’interno, e non si sente il sapore del lievito di birra, che ogni tanto invece viene fuori in questo genere di preparazioni. Oltre alla cannella ho aggiunto anche il cardamomo, dopo aver pestato i semi in un mortaio, l’aroma che esso sprigiona vi farà sognare e vi trasporterà in una bakery di Stoccolma.

Ingredienti

1 uovo
175 g farina 00
175 g farina manitoba
50 g zucchero di canna
5 g lievito di birra secco
200 ml latte
60 g burro
1 cucchiaino di polvere di cardamomo
un pizzico di sale

Per il ripieno

100 g burro morbido
90 g zucchero di canna fine
2 cucchiai di cannella in polvere

Procedimento

In un pentolino sciogliere il burro con il latte a bassa temperatura, dev’essere tiepido. Lontano dal fuoco aggiungervi il lievito secco, mescolare e tenere da parte. La temperatura è molto importante poiché il calore attiva i lieviti ma se eccessivo questo ucciderà i microrganismi vivi del lievito.

In una planetaria porre tutti gli ingredienti secchi, unire la mistura di lievito, latte e burro e lavorare con l’apposito gancio ad uncino finché l’impasto non prende forma e si stacca naturalmente dai bordi (circa 5 minuti). Se non avete una planetaria utilizzate un cucchiaio di legno, e olio di gomito e pazienza, infatti dovrete lavorare l’impasto per diversi minuti. Trasferite il composto in una ciotola, coprite con la pellicola e lasciate riposare in un luogo caldo per almeno un’ora, finché non è raddoppiato in volume.

Nel frattempo preparare il ripieno lavorando lo zucchero con il burro e la cannella fino all’ottenimento di una crema morbida e spalmabile. Riprendere l’impasto, stenderlo con il mattarello ottenendo un rettangolo spesso circa 3 millimetri, cospargetelo con la crema di burro e cannella. A questo punto esistono diverse modalità per creare cinnamon di tante forme diversa. Per quella classica (che non è quella che ho scelto questa volta) bisogna arrotolarlo dal lato lungo e poi tagliare delle rondelle.

Disporre le rondelle su una leccarda ricoperta di carta da forno e lasciar riposare ancora un’ora in un luogo caldo. Spennellare poi la superficie con del tuorlo d’uovo e ricoprire di granella di zucchero (opzionale). Infornare e cuocere a 180° per circa 20-22 minuti.

Ingredients

  • 1 egg
  • 175 g all purpose flour
  • 175 g strong flour
  • 50 g brown sugar
  • 5 g yeast
  • 200 ml milk
  • 60 g butter
  • 1 tsp ground cardamom
  • pinch of salt
  • For the filling:
  • 100g soft butter
  • 90g sugar
  • 2 tbsp cinnamon powder

Instructions

In a saucepan melt the butter with the milk on a low temperature, it should be lukewarm.

Set aside, add the dry yeast and mix well.

The temperature is crucial here because the heat will activate the yeasts but if too high it will kill the micro-organisms that live inside.

In a stand mixer place all the dry ingredients, add the yeast mixture and work the dough with the hook tool of your mixer.

After about 5-6 minutes the dough should start to get off the edges of the bowl.

Transfer the dough into a bowl, cover with cling film, put it in a warm place and let it rise for at least an hour until it doubles in size.

In the meantime prepare the filling beating the butter with sugar and cinnamon until you reach a creamy and spreadable consistency.

Take your dough and roll it with a rolling pin into a rectangular shape of about 3 mm thickness. Cover it with the cinnamon and butter creamy filling.

Now you can wrap your buns, there are so many different ways to fold them.

For the most classic one, roll the dough from the long side and then slice into 12 pieces approximately. Place them on a baking tray lined with parchment paper and let the buns rise for another hour in a warm place.

Lastly, coat them with an egg wash and sprinkle with pearl sugar, bake at 180° for about 20-22 minutes.
