CHOCOLATE BABKA + APPLE CINNAMON BABKA

This is my last recipe of 2020, I have always wanted to make a Babka but I thought it was too difficult. Well, it is not difficult at all and it is super delicious, I am happy I made this recipe in 2020 as it was on my to-do list for a very long time. With this recipe, you will get enough dough to make 2 babkas, so I am giving you two filling options, one more traditional that is chocolate, and one with apple and cinnamon that have more of a nordic taste as it reminds Swedish cinnamon rolls.

Babka is definitely my new favorite brioche and I will enjoy it with a long coffee during a slow breakfast as in the next few days as I am finally on holiday. Happy Baking and Happy New Year!

BAKBA AL CIOCCOLATO + BABKA MELE E CANNELLA 

Se ancora non conoscete il termine Babka è arrivato il momento di rimediare. Benché ancora poco conosciuto nel nostro Paese questo dolce originario dell’Est Europa vi conquisterà al primo morso. Anzi, prima ancora vi innamorerete della sua bellissima forma e del suo profumo inebriante di brioche. Personalmente trovo che sia uno dei dolci esteticamente più belli, l’intreccio che lascia trapelare il ripieno cattura subito la nostra attenzione. La ricetta come vedrete non è particolarmente complicata, basta solo preparare l’impasto il giorno prima e quindi bisogna decidere di farla in anticipo, altrimenti se proprio avete fretta e decidete di farla all’ultimo momento vi consiglio di fare il riposo in frigo almeno 6 ore. Le dosi per l’impasto vi permetteranno di preparare due Babka e per questo motivo vi suggerisco due diversi “ripieni”, uno al cioccolato, più tradizionale, e uno con mele e cannella che invece richiama un po’ le cinnamon rolls svedesi. Ovviamente ci sono tante altre possibilità di adattare la ricette per esempio con della crema di pistacchi, o di burro di arachidi. Direi che è proprio la ricetta perfetta per cominciare questo nuovo anno! Buon 2021 a tutti!

Ingredienti 

Per l’impasto delle 2 Babka

65 g acqua tiepida
65 g latte tiepido
7 g lievito di birra secco (oppure 20 g di lievito di birra fresco)
530 g di farina bianca
100 g di zucchero
3 uova
150 g di burro morbido
pizzico di di sale

Per la Babka al cioccolato

250 g crema di nocciole spalmabile

Per la Babka mele e cannella

250 g marmellata di mele (meglio ancora se di mele cotogne)
canella in polvere, qb

Procedimento

  1. Mescolare con una forchetta il lievito con l’acqua e il latte tiepidi (circa 36° C) e un cucchiaino di zucchero.

  2. Porre la farina, e lo zucchero in una planetaria con il gancio, attivare la planetaria  a bassa velocita e versarci sopra il mix di lievito.

  3. Aggiungere le 3 uova intere a temperatura ambiente lavorare per circa 2 minuti a velocità medio bassa, poi aggiungere il burro morbido a tocchetti e il pizzico di sale.

  4. Lavorare per altri 6 – 8 minuti velocità 3 (media) fino ad ottenere un impasto liscio ed elastico.

  5. Terminata la fase precedente, formare una palla con l’impasto e sistemarla in una ciotola coperta con della pellicola trasparente.

  6. Porre in frigorifero per almeno 6 ore, preferibilemente tutta la notte.

  7. Il giorno successivo riprendere l’impasto, dividerlo in 2 parti uguali e lavorare il primo panetto su una superficie infarinata e formare un rettangolo.

  8. Cospargere tutta la superficie del rettangolo con la farcitura al cioccolato, tagliare i bordi in eccesso in modo da ottenere un rettangolo.

  9. Cominciare ad arrotolare partendo dal lato lungo facendo attenzione a stringere bene. Tagliare le estremità in eccesso.

  10. Tagliare il rotolo a metà nel senso della lunghezza e intrecciarlo con la farcitura rivolta verso l’alto. Ci sono dei video esplicativi su yourube che vi possono aiutare a capire meglio questo passaggio.

  11. Trasferire la treccia in uno stampo da plum cake ricoperto di carta da forno, oppure ben imburrato. Coprire con un canovaccio e lasciar lievitare ancora per circa un’ ora in un luogo tiepido.

  12. Ripetere i punti da 9  a 12 con il secondo panetto farcendolo con la marmellata di mele e spoverandolo di cannella.

  13. Terminata la lievitazione, infornare e cuocere a  175-180°C per circa 30-35 minuti.

  14. Sfornare, sistemare su una gratella e lasciar raffreddare.

  15. Per ottenere una babka ancor più croccante e lucida potete ricoprirla subito dopo averla sfornata con della semplice glassa di zucchero. Basta far scaldare in un pentolino 100 gr di zucchero con 80 ml di acqua e poi spennellare la babka con lo sciroppo così ottenuto.

Ingredients

  • 65 g lukewarm water
  • 65 g lukewarm milk
  • 7 g dry yeast (or 20 g fresh yeast)
  • 530 g all purpose flour
  • 100 g caster sugar
  • 3 eggs
  • 150 g butter, softened
  • pinch of salt
  • CHOCOLATE BABKA FILLING
  • 250 g hazelnut spread
  • APPLE CINNAMON BABKA
  • 250 g apple jam (even better if quince jam)
  • cinnamon powder

Instructions

Mix the yeast with the lukewarm water and milk (36°C), and whisk it with a fork, and add 1 tsp of sugar.

Place the flour and sugar into a stand mixer bowl, stir in the yeast mixture.

With the hook attachment of the stand mixer start mixing and add the 3 whole eggs, they should be at room temperature.

Knead the dough for about 2-3 minutes, at medium-low speed, then add the softened butter.

Knead for another 5-7 minutes.

Once you have a smooth and elastic dough remove it from the mixer, form a ball and place it in a bowl covered with clingfilm.

Let it rest for at least 6 hours, better if overnight, in the refrigerator.

Remove the dough from the fridge, divide it into two equal pieces, and place the first one onto a lightly floured surface.

Roll out the first piece of dough to a square and using an offset spatula, spread the filling in an even layer. Trim of the excess to obtain a neat square

Starting at the long edge nearest you, tightly roll up each dough square into a tight log.

Using a sharp knife, cut the logs in half crosswise.

Set the other halves on top in the opposite direction to form a cross. Twist to form spirals and transfer to the prepared pan.

Do the same process with the other piece of dough using the other filling.

Let them rest in a warm place for at least 1 hour.

Preheat the oven and bake at 175 -180° until golden brown for about 30-35 minutes.

While babkas are baking you can also make a simple sugar syrup.

Bring sugar and water to a simmer until sugar dissolves. Remove from heat and set aside.

As soon as the babkas leave the oven, brush the syrup all over each. This will make your babkas glossy on the outside and moist on the inside.
