Banana Cupcakes with Marshmallow Icing

Today we are going bananas!! These cupcakes are a must for banana lovers, as they are so moist and flavorful. The secret here is very simple: use super-duper ripe bananas. I know, they are not so beautiful to look at, but that is the only way to achieve such a rich flavor.

For the frosting, I made this marshmallow meringue icing, which is very easy to make, and the recipe is based on Cupcake Jemma’s one. The best part of course is blowtorching them, and that’s when I went bananas!


ITALIAN VERSION

In inglese “go bananas” significa dare i numeri, di solito in senso positivo, quando si è molto eccitati per qualcosa, per capirci. E questi cupcakes alla banana sono veramente da perderci la testa. Il segreto per ottenerli così gustosi e morbidi è semplicemente utilizzare banane super mature, e per super mature intendo che devono essere proprio nere. Certo, non sono belle a vedersi ma il sapore che infondono nei dolcetti è qualcosa di unico. Li ho glassati con un marshmallow meringue icing ispirato alla ricetta di Cupcake Jemma. La parte che personalmente ha mandato me fuori di testa dall’eccitazione è stata caramellizzarli con la mini fiamma ossidrica da cucina!

Ingredienti

Cupcakes
125 g farina auto-lievitante
100 g burro ammorbidito
85 g zucchero semolato
25 g zucchero di canna
¼ cucchiaino bicarbonato
2 uova
2 banane molto mature schiacciate
1-2 cucchiai di latte
estratto di vaniglia
pizzico di sale

Marshmallow Meringue Icing
90 g zucchero
1 albume
1 cucchiaino miele
estratto di vaniglia
pizzico di sale
pizzico di cremor tartaro

Procedimento

Schiacciare le banane con una forchetta. Setacciare la farina in una ciotola, aggiungere poi gli altri ingredienti secchi, il burro morbido e le uova, mescolare bene per circa un minuto. Aggiungere il latte e le banane schiacciate e mescolare ancora per un paio di minuti.

Riempite 12 pirottini di carta disposti in una leccarda da muffin/cupcake. Cuocere a forno preriscaldato a 175° per circa 20-22 minuti. Lasciar raffreddare.

Per il frosting, inserite tutti gli ingredienti in una ciotola resistente al calore. Ponetela sopra una pentola con acqua a leggero bollore (bagno maria) e cominciate a mescolare con uno sbattitore elettrico, prima a bassa velocità poi mano a mano aumentando. Dopo circa 10 minuti avrete ottenuto un composto lucido, liscio e gonfio.

Ora potete decorare i vostri cupcake e caramellare la glassa con una fiamma ossidrica da cucina.

Ingredients

  • FOR THE CUPCAKES
  • 125 g self-raising flour
  • 100 g soft butter
  • 85 g caster sugar
  • 25 g brown sugar
  • ¼ tsp baking soda
  • 2 eggs
  • 2 very ripe mashed bananas
  • 1 or 2 tbsp milk
  • vanilla extract
  • pinch of salt
  • FOR THE ICING
  • 90 g sugar
  • 1 egg white
  • 1 tbs honey
  • vanilla extract
  • pinch of salt
  • pinch of cream of tartar

Instructions

In a bowl mash bananas with a fork.

Sift the flour into another bowl, then add the dry ingredients, the soft butter and the eggs, mix well for about a minute.

Add the milk and the bananas and mix for another couple of minutes.

Divide the batter into 12-cup muffin tin lined with paper cases (¾ full).

Bake in a preheated oven at 175°C for about 20-22 minutes until a toothpick inserted in the center of a muffin comes out clean.

Let them cool for 5 minutes, then transfer them to a wire rack to cool completely.

For the frosting, place all the ingredients in a heatproof bowl and stir well.

Transfer it on top of a saucepan with simmering water (bain-marie/double boiler) and star whisking with an electric mixer.

Beat starting with low speed and then increasing to high for about 10 minutes, until the frosting becomes stiff, glossy and thick.

Now you can decorate your cupcakes and then torch them with a blowtorch for a stunning effect.
