APRICOTS FRANGIPANE TART

I love shortcrust pastry because is so versatile, you can make any sort of different cake and tart with it. In Italy, we have our own version of shortcrust pastry which has eggs in it and is called pastafrolla. Inside this crunchy shell of pastafrolla we have a frangipane cream filling, another amazing typical Italian pastry cornerstone. It consists of sweet almond-flavored custard and is usually baked. To make this tart super pretty I decorated it with fresh apricots, in a lovely pattern.

You can also bake the apricots with the tart but of course, it will not be as pretty. Another thing you can do is substitute the frangipane filling with custard. In any case, it is going to be delicious and perfect for a celebration, now that we can finally have dinner with friends and relatives it is just right to celebrate, safely of course as the fight against Covid-19 is not over yet.

CROSTATA DI ALBICOCCHE CON CREMA FRANGIPANE

Una buona crostata, magari con una graziosa decorazione di frutta, si rivela un dolce estivo perfetto, per esempio, dopo una cena all’aperto in compagnia di amici. Ora che finalmente possiamo ricominciare a frequentare con un pochino più di serenità amici e parenti, mi sembra giusto anche celebrare con un bel dolce a fine pasto. Il ripieno di crema frangipane è delicato e buonissimo, e per rendere la torta più scenografica ho deciso di utilizzare le albicocche fresche e semplicemente adagiarle sopra, invece di cuocerle in forno insieme alla torta. Se volete una variante potete anche cuocere il guscio di pastafrolla prima, poi riempirlo con crema pasticcera e infine decorare con le albicocche, le crostate ci permettono di spaziare secondo il nostro gusto e la nostra fantasia ed è forse anche per questo che le amiamo tanto!

Ingredienti

Per la pasta frolla

167 g farina 00
100 g burro freddo
66 g zucchero
33 g tuorlo d’uovo

Per la crema frangipane

120 g burro a temperatura ambiente
120 g zucchero a velo
2 uova medie
120 g farina di mandorle

Per la decorazione

Procedimento

  1. Per la pasta frolla, amalgamare bene il burro freddo con lo zucchero, unire la scorza di limone. Aggiungere il tuorlo d’uovo, la farina e impastare velocemente fino all’ottenimento di un impasto omogeneo.

  2. Formare un panetto, stendere la frolla alta 0.5 cm tra due fogli di carta da forno e lasciar riposare in frigo.

  3. Nel frattempo prepariamo la crema frangipane. Porre il burro ammorbidito in una ciotola, unire lo zucchero a velo e montare con la frusta.

  4. Aggiungere le uova una alla volta continuando a mescolare e infine incorporare la farina di mandorle, mescolando con un cucchiaio di legno. Far riposare in frigo fino al momento dell’utilizzo.

  5. Riprendere la frolla dal frigo, foderare una teglia da 15 cm di diametro, bucherellare il fondo con i rebbi di una forchetta e cuocere a 180° in forno ventilato per 10 minuti.

  6. Dopo 10 minuti rimuovere lo stampo da forno, stendere uno strato di crema frangipane sul fondo della crostata.

  7. Infornare questa volta a 170° forno statico per circa 30-40 minuti.

  8. Lasciar raffreddare e poi decorare la superficie della torta con le albicocche, spennellare leggermente con un velo di marmellata o di gelatina alimentare.

Ingredients

  • FOR THE SHORTCRUST PASTRY
  • 167 g flour "00"
  • 100 g cold butter
  • 66 g sugar
  • 33 g egg yolk
  • lemon zest
  • FOR THE FRANGIPANE CREAM
  • 120 g butter, room temperature
  • 120 g icing sugar
  • 2 eggs
  • 120 g almond flour (ground almonds)
  • FOR DECORATION
  • apricots

Instructions

Mix the cold butter with the sugar, add the lemon zest.

Add the egg yolk, flour, and knead quickly until a dough is formed.

Roll out the pastry 0.5 cm high between two sheets of baking paper and let it rest in the fridge for at least 2 hours, preferably overnight.

In the meantime let's make the FRANGIPANE cream.

Place the softened butter in a bowl, add the sugar and whisk them together.

Add the egg while continuing to mix and lastly add the almond flour, stirring with a wooden spoon.

Leave to rest in the fridge until ready for use.

Take the pastry from the fridge, line a 15 cm diameter tin, prick the bottom with a fork and bake at 180 ° in a ventilated oven for 10 minutes.

After 10 minutes remove the tin from the oven, spread the frangipane cream on the bottom of the tart.

Bake at 170 ° in a static oven for about 30-40 minutes.

Let the tart cool down and then decorate it with fresh apricots, gently sprinkle them with a but if jam or gelatin for a shiny look.
